Badam

Prunus dulcis (Mill.) D.A.Webb · Rosaceae

Badam is the almond, a rose-family orchard tree of the Mediterranean and Central Asia. Most almonds eaten in India are imported from California, though Kashmir grows some, including the prized mamra type. Indian homes soak almonds overnight and peel them, grind them into badam milk and cook them into halwa. Bitter almonds, a different form, contain amygdalin, which releases cyanide.

How to recognise Badam

It is a small deciduous tree with grey bark.

The leaves are narrow, lance-shaped and finely toothed.

Pale pink to white blossoms open in late winter before the leaves.

The fruit is a green, velvety drupe whose leathery hull splits to release a pitted shell.

The kernel inside the shell is the almond.

Modern notes on Badam

California grows most of the world’s almonds, and pollinating its orchards is the largest managed honeybee event in the world.

Almonds are rich in vitamin E, magnesium and healthy fats.

Sweet almonds contain very little amygdalin, while bitter almonds can contain enough to be dangerous.

Badam safety

Do not eat bitter almonds. Almonds are a common nut allergen. Whole nuts can choke young children.

Ecology and sourcing

Its wild relatives grow in the mountains of Central and West Asia.

Most varieties need bees to carry pollen between compatible trees.

It needs cold winters and dry summers.
