How to recognise Thyme
It is a small, bushy, woody shrub, usually under thirty centimetres, with square, woody stems.
The leaves are tiny, oval, grey-green and opposite, with rolled edges.
Small pale pink to lilac, two-lipped flowers grow in clusters at the shoot tips.
Oregano, Origanum vulgare, has larger, softer, rounder leaves.
The leaves are aromatic all year, and the plant can be clipped often for the kitchen.

Some cough preparations with thyme have shown modest benefits in trials.
Thyme safety
Use thyme as a herb. Do not swallow the essential oil, which is strong and can irritate.
Ecology and sourcing
It is native to the western Mediterranean, on dry, sunny, rocky slopes.
It needs very good drainage and dislikes humid, waterlogged conditions.
Bees love it, and thyme honey is famous in Greece.
In India it grows best in the cool season or in the hills, and needs a sunny, dry spot in the monsoon.
