Milagu

Piper nigrum L. · Piperaceae

Milagu is Piper nigrum, black pepper — Kerala’s old vine and the berry that still flavours most of the world’s tables. Green, black and white pepper are stages and processings of the same fruit, not three species. Long pepper (Piper longum) is a cousin and a different article.

How to recognise Milagu

Linnaeus published Piper nigrum. The family is Piperaceae. It is a climber with broad, glossy, cordate-ovate leaves and catkin-like spikes of small flowers that become the peppercorn.

Black pepper is the cooked, dried unripe fruit. White pepper is the ripe fruit with the outer skin removed. Green pepper is the unripe fruit dried or brined to stay green. Same species.

Piper longum (pippali) has longer, thinner spikes and a different heat. Piper cubeba and other market peppers exist. A jar that says only “pepper” in a medical aisle is being lazy.

Tamil milagu, Hindi kali mirch and Sanskrit marica are the kitchen names. A wrinkled dark sphere about 5 mm across is the everyday black corn.

Malabar, Vietnam and Brazil now all grow it. Origin on a packet is a farm fact, not a romance if it is true.

A vine on a living support tree in Kerala and a monocrop pole garden in Vietnam are the same species. A district on the label only means something if it is true.

Tellicherry, Lampong and other grade names are size and origin grades of P. nigrum, not different plants. Write the Latin name first, then the grade.

Traditional use of Milagu

Indian kitchens and Ayurveda

Pepper is food first. In Ayurvedic lists marica is a pungent fruit used in formulae. Food and formula are different jobs.

Tamil household

Milagu rasam and milagu kashayam are ordinary South Indian uses.

Modern notes on Milagu

Piperine is the alkaloid that makes pepper bite and that some capsules add to turmeric. A milligram in a study is not a teaspoon in a soup.

Adulteration with papaya seed and exhausted pepper is an old fraud. Bite and smell a corn; do not trust a grey powder.

A mill that will show you a whole corn is the adult path. Once the spice is a dust in a masala, only the blender’s word remains.

Milagu safety

Isolated piperine capsules are not a condiment.

Pepper can bother reflux and, in theory, change how some medicines are absorbed. People on many drugs should not start piperine supplements from a gym poster.

Essential oil is not for drinking.

Ecology and sourcing

The vine needs support, shade when young, and a wet climate. It is a crop, not a wild-gathered forest secret, when the trade is honest.

Questions about Milagu

Are black and white pepper different plants?

No. Both are Piper nigrum. The difference is ripeness and whether the outer skin is left on.

Is long pepper the same?

No. Long pepper is usually Piper longum, a related species with a different fruit spike.
