Lettuce is a cool-season salad leaf, domesticated in ancient Egypt from wild prickly lettuce more than four thousand years ago. Iceberg, romaine, butterhead and loose-leaf types are all forms of this one species. In India it grows best in winter on the plains and year-round in the hills, and it now fills burger, sandwich and salad counters. Its Latin name comes from the milky sap.

How to recognise Lettuce
It forms a rosette or tight head of soft, smooth leaves that may be green, red or speckled.
Cut stems and leaf ribs ooze a white milky latex.
In heat it bolts, sending up a tall, leafy stem that turns the leaves bitter.
The flowering stem carries many small, pale yellow, dandelion-like heads that close by midday.
Seeds are slender and topped with a tuft of white bristles for wind dispersal.
Traditional use of Lettuce
Kitchen
Leaves are eaten raw in salads, wraps and sandwiches, and outer leaves are sometimes stir-fried in Chinese cooking.
Global food practice
Kitchen
Stem lettuce, a type grown for its thick stalk, is peeled and sliced in Chinese cooking.

Ancient Egypt

Modern notes on Lettuce
Lettuce is mostly water and very low in calories, but darker leaves supply vitamin K, vitamin A and folate.
Romaine and red leaf types carry more nutrients than pale iceberg.
The dried latex was once sold as lettuce opium, but studies have not shown that lettuce causes sleep in normal amounts.
Raw leafy greens have been linked to outbreaks of food poisoning, including E. coli from romaine in the United States.
Lettuce safety
Wash lettuce well in clean water because it is eaten raw. People on warfarin should keep their intake of dark leafy greens steady.
Ecology and sourcing
Its wild ancestor, prickly lettuce, is a common roadside weed across Europe and western Asia.
Flowers mostly self-pollinate, so seed varieties stay true.
It germinates poorly in high soil temperatures, which is why Indian plains growers sow it after the monsoon.
