Asparagus officinalis L. · Asparagaceae
Garden asparagus, Asparagus officinalis, is the vegetable whose tender spring spears are a delicacy in Europe and hotel kitchens. The spears grow from a perennial crown that can produce for fifteen to twenty years. In India it is grown in small amounts in the hills and around cities for restaurants. It is a relative of shatavari, Asparagus racemosus, but a different plant.

How to recognise Garden asparagus
In spring the crown sends up thick, green, purple or white spears tipped with tight, scale-like leaves.
Left uncut, the spears grow into tall, feathery ferns of needle-like cladodes, which are flattened stems, not true leaves.
Male and female plants are separate. Female plants carry small red berries in autumn.
Shatavari, Asparagus racemosus, is a climbing, prickly plant grown for its tuberous roots.
Spears grow very fast in warm weather, sometimes several centimetres in a day.
Traditional use of Garden asparagus
European kitchen
Asparagus is steamed, grilled or roasted and served with butter or hollandaise. White asparagus, grown under soil to block light, is prized in Germany and France.
European food practice
Modern notes on Garden asparagus
Asparagus provides folate, vitamin K and fibre.
Eating asparagus makes urine smell distinctive in many people, because of sulphur compounds formed from asparagusic acid.
Garden asparagus safety
Eat the spears. The red berries are mildly toxic.
Ecology and sourcing
It is native to Europe, North Africa and western Asia.
It needs a cool season and well-drained soil, which is why it is grown mainly in the hills in India.
Its feathery summer growth feeds the crown for the next year’s spears.
A new bed is not harvested for the first two years, so the crowns can build strength.
